3, Meaty Jacket Potatoes.
Scrub 2 Large potatoes clean and remove any warts, shoots etc.
Place in the microwave to cook on full power for approximately 10 minutes.
Then turn the potatoes over (be careful, they will be HOT) and cook for a further 10 minutes.
The exact cooking time will depend on the size of potatoes and the power of the microwave.
They will be cooked as soon as you can smoothly push a fork into them.
Meanwhile, chop a small onion and fry gently in a little oil in a saucepan until soft and JUST changing colour.
Don't overcook.
Take a tin of corned beef then after removing any excess fat, chop into small pieces and stir well into the saucepan of
cooked onions with a tin of chopped tomatoes and heat up gently.
The onions may be microwaved in a covered casserole dish with a small amount of oil or butter
and then the corned beef and tomatoes added and warmed in the casserole dish in the microwave if preferred
(Safer after a student night out!)
Place the cooked potatoes on plates and scoop out a large piece from the top of each to create a hole
Fill the holes with half of the meaty filling and place the removed sections of potato on top.
Serve either on their own, or for a delicious and healthy full meal, with a tasty salad.
The other half of the filling may be frozen, or kept covered in a fridge for up to 48 hrs for later use.
4, Easy perfect rice for curries etc.
Fed up of rice that is more like rice pudding when you cook it for a curry?
Forget all the traditional methods of cooking rice, this method never fails.
Fill a large saucepan with X litres of water per portion and bring to the boil,
measure out half a cup of rice (Basmati or any long grain rice) per person and put it straight into the boiling water with quarter a teaspoon of salt per person. There is no need to rinse the rice first.
Bring back to the boil, stirring continuously to stop it sticking to the bottom of the saucepan.
Boil for exactly eight minutes, stirring occasionally
Pour the rice and water into a large sieve and immediately rinse under a running cold tap until the water runs clear.
(If you wish the rice may now be kept in a sealed container in a refrigerator for up to 24 hours.)
DO NOT KEEP IT LONGER!
Cooked rice kept longer than this can cause serious food poisoning.
To serve the rice, form it into a ring on a plate and heat in a microwave for 1 to 2 minutes until it is piping hot.
